Easy Fettuccine Alfredo

This is one of my favorite go-to meals. It’s only seven ingredients, and it always impresses and satisfies.

What you need:

Noodles:

Put them in a pot of boiling water and cook them for like 8-10 minutes

Alfredo Sauce:

1/4 cup margarine or butter

1 1/2 tsp minced garlic

1/3 cup flour

3 cups milk

1 cup grated or shredded parmesan cheese

1 tsp. salt

 

Making a basic white sauce is a really good skill. This one has garlic and parmesan added for flavor, but you can use this same white sauce recipe (minus the garlic and parmesan, plus whatever flavors you want) to make sauce for other pastas like macaroni and cheese or as a base for something like potato soup.

Okay, here’s how you make a white sauce:

Melt the butter in a saucepan. Put the garlic with the butter and let it simmer together for about 20-30 seconds. Then add the flour and stir it into a paste. Once you have a paste, add the three cups of milk and whisk the paste into the milk. Turn down the heat to medium and allow the sauce to come to a boil, stirring it occasionally so that it doesn’t stick to the bottom of the pan. Once it comes to a soft boil, add the parmesan and salt and stir it all together. Remove from heat. Mix with noodles and enjoy 🙂

Since it’s important to hit all five food groups every day (fruits, vegetables, protein, dairy, and grain), I try to eat at least 3 food groups at every meal. This pasta has grains and dairy, then I’ll usually steam a vegetable like broccoli for a side dish and cook a chicken breast to add some protein.
