Simple Spinach Side Salad

Everybody needs a little more greens in their lives, but sometimes it’s miserable to eat that bowl of microwaved broccoli, and the idea of a salad often feels a little too complicated and a little less satisfying.

But here is one recipe that I can guarantee is easy, delicious, and satisfying. (Not for a whole meal, just for the side).

 

1 Cup Spinach (or more)

1/3 Cup Chopped Broccoli

5-7 Baby carrots
1/8 Cup Dried Cranberries

Sprinkle with Sunflower Seeds

Dressing of your choice

Other options: chopped avocado, grape tomatoes

 

Okay, okay, I know that sunflower seeds and dried cranberries likely aren’t your typical college student pantry items. But I can tell you, investing in a little bag of each will enhance all of your salad experiences, and it lasts for a long time.

This salad is great to pack in a  little tupperware and take to eat during lunch time, or on the side at dinner. It will blow your friends away, they’ll think you’re very fancy and healthy, because you are.
